Cool Idea from Vecchia Posta - Roast Shallots

Roast scallions as an appetizer...

3 shallots per person
Course sea salt
Balsamic vinegar
Wedges of bread

Roast the shallots in their entire skin until soft (as you would for roast garlic)

Serve family style on a bead of sea salt.

To eat...  peal and spread the shallot on bread, sprinkle on a little sea salt and vinegar.
